This delicious Caribbean recipe is taken from a prized Barbados cookbook!
A gluten free biscuit base is covered with a layer of creamy coconut filling before being topped by super fluffy meringue.
The gluten free digestive biscuits in the base can easily be replaced by regular biscuits if required.
Coconut Meringue Pie
For The Pie: 300g Gluten Free Digestives, 80g Unsalted Butter, 1/2 Pint Semi-Skimmed Milk, 85g Desiccated Coconut, 60g Caster Sugar, 1/2tsp Grated Nutmeg, 1tsp Vanilla Extract, 3 Egg Yolks (Beaten)
For The Meringue: 3 Egg Whites, 115g Caster Sugar, 1/2tsp Vanilla Extract
1) Preheat the oven to 200c. Place the digestives in a food processor, whilst blitzing slowly pour in the butter until well combined. Transfer to a medium lined cake tin (preferably spring form). Bake the base in the oven for 10 minutes, remove and set aside.

Months ago, Welcome Home Brands sent me a selection of paper bakeware. Included in the collection was a set of loaf pans. As I had seen a recipe for a lemon-blueberry cake that I was actively salivating over, I knew what to do with the pans.
This turned out to be one of the most delicious baked goods I’ve made. The sweetness of the blueberries and the tart lemon are perfect together.
Your typical baking ingredients (plus the fruit).
The wet ingredients.
The batter with the blueberries.
Two pans, ready to go!
Cooling on the rack.
There is a sugar glaze on top that next time I’d either leave out or make with a finer sugar.
Sweet, tart and ambrosial.

The Celiac Disease Program at Children’s National Medical Center (CNMC) is thrilled to invite you to the Second Annual Washington DC Gluten-Free Expo!
Our last expo brought more than 700 people to check out the gluten-free goodies from more than 60 vendors from around the world! This year we’re expecting more than 1,000 attendees based on early registration figures. We hope you’ll be able to join us for the 2012 event, which promises to be even better than our last expo!
The 2012 Expo will feature even more gluten-free vendors than last year! Each vendor will sample and/or sell their products. In some cases, the vendors will offer large discounts to purchase products at the event.
This event is sponsored by the Celiac Disease Program at Children’s National Medical Center.
All proceeds from the event will benefit the patients and families of this program.
Gluten Free Cooking Class
For my Gluten Intolerant folk out there, we wanted to let you know about a cooking class. On Monday (6/4/12) in Ann Arbor Michigan at 5060 Jackson Road between 6:30-9:30 p.m.
